水車、狸貓、和式拉門、禢禢米,氛圍十分典雅靜謐,有著濃濃日本風格的水戶日本料理,店名來自著名的時代劇「水戶黃門」,是1984年開業三十餘年的老字號懷石料理,一路走來,它見證了臺灣的經濟起飛,也旁觀了時代的更迭,但專心一意地以時令嚐鮮為原則,激發出當季食材最華美濃郁的原味手法收服人心始終不變。
由於是無菜單料理,這裡的常客多以一個定額的預算,除接待員徵詢什麼不吃之外,交由主廚為之配菜;或是選定因應季節變化的套餐,也是一個初入門的好選擇。水戶設有十間包廂,分別可容納四到四十人,所以日常接待商務或闔第光臨的主顧為多。

Shuihu Japanese Restaurant has elegant and quiet Japanese atmosphere. Established in 1984, this old Kaiseki cuisine restaurant witnessed the blossom of Taiwan’s economy and the change of the times. However, it insists on using fresh and seasonal food ingredients to conquer people’s palates.
Because the restaurant does not offer a menu, customers often visiting here pay a definite budget and let the chef make dishes for them. There are ten compartments in Shuihu, which can accommodate four to forty people.
年輕族群也可探索的懷石風味
懷石料理很難列舉店家的招牌手路,因為每道菜都可能因為季節與食材特性而有變化,據說,連烹煮的器皿也會深深影響食物的風味。例如雪雁火鍋,一般火鍋久煮容易油膩,便採用日本和紙做為鍋具,即可有效去除火鍋多餘油脂與雜質,還原昆布湯底的清澈與原味;油花豐美、九級以上的澳洲黑毛和牛,想要保持順口滑嫩,就必須用觀音石(火山岩)板,才能利用四百度高溫完美鎖住和牛的肉汁,再以摩洛哥松露鹽提味,香氣就會在嘴裡濃濃地化開。
水戶第三代掌門許克昌說,為了區隔客層,並開發年輕市場,近來也以懷石手法,開創新穎菜式。例如明蝦吉利燒,有別於一般的鹽烤或酥炸方式,酸甜醬汁不但將肉質鮮美的明蝦完美包覆,口味還能帶點辣又不搶鮮味;甘鯛鮭魚卵蒸,精選本港現流甘鯛魚調理,完全保留傳統和食精髓,又激發出現流精華;烏金鱈魚燒,特選台南烏魚子與深海圓鱈慢火燒烤,有著雙料合而為一的口感絕妙。懷石料理必不可少的生魚片,在這兒也可吃到坊間罕見的季節魚鮮。
懷石料理總是一道道慢慢上,適合悠閒心境細細品嚐。精緻,在水戶卻能夠高貴而不貴,初次探索的人,大可放心地從心月套餐入門,至於年輕族群或希望多省點荷包的人,則可於午間來品嘗特惠定食或輕懷石。
A Kaiseki cuisine able to be explored by the youth
Kaiseki is difficult to enumerate each store's signature dish because every dish is probably changed seasonally in accordance with the season and ingredients. People said that even the cooking utensils will influence tastes of foods. For example Japanese beef hotpot uses Japanese paper as a pot which can filter extra grease and impurity in the hotpot and restitute the clearness and original flavor of the kelp soup foundation; by heating a volcanic stone to 400 degree centigrade, the smoothness and tenderness of the rich grease of the above 9-ranked Australia Japanese beef can be preserved. Finally, adding Morocco’s truffle salt to the hotpot makes the aroma melting slowly in your mouth.
In order to differentiate the customers and appeal the young customers, innovate cuisines are made in a way of Kaiseki cuisine, for example, Baked Prawn. Different from the general dish grilled with salt or fried, the saucy and sweet sauce cover the fresh prawn. Steamed Tilefish and Salmon Roes is made from fresh tilefish which preserves the essence of traditional Japanese food. Baked Mullet Roe and Cod is made by baking the selected Tainan’s mullet roe and deep-sea cod with low heat, which creates a magical experience: one bite with two flavors.
