現代人越來越講究養生,不但吃健康素的人越來越多,連「素友」社團也不少呢!如果提到樹林這邊素友的聚餐地點,沒有人不知道這家總鋪師開的大眾素味餐廳,你是否也想來「素素看」?

為人苦幹實幹的阿明師以外燴起家,他說:「人生就是許多因緣的總和。」本名許原明的阿明師,岳父是當地望族,成家後不久,他開始思忖立業,就有跟岳父租房子的海產店打算歇業,他出手承接後,開始有了大眾餐廳的根基。生意越做越好,好到位子都不夠,這時住隔壁的岳父剛好喬遷新居,他打通兩間,並往二三樓發展,從1985年創立以來,不出幾年時間,大眾餐廳成為在地企業老闆及市井小民口耳相傳中的好口碑餐廳。

不過最讓阿明師感念的因緣,第一個是太太,事業成就全歸功於她,剛開業時,忙到臨盆在際,都在外場奔波;第二是一位老榮民,當初生意好到登報三個月請不到洗碗工,老伯伯的相助讓他至今難忘;第三位要謝謝長年茹素的結拜大嫂,沒有她,也沒有今天的「素味餐廳」。

There are not only more and more people eating healthy vegetarian food but many “vegetarian clubs” are set up as well! When it comes to the dining place for vegetarians in Shulin, people all know “DaZheng Vegetarian Restaurant.”

Chef A-Ming, Hsu Yuan-Ming, was doing catering in the past. After getting married, he took over a closed seafood restaurant, which became the foundation of DaZhong Vegetarian Restaurant. Since the establishment of the restaurant in 1985, within a few years, DaZhong Vegetarian Restaurant has become a reputational vegetarian restaurant known for the local entrepreneurs and citizens.

Chef A-Ming is thankful to his wife most. The success of his business is contributed to her. The second person he has to thank is an old veteran helping wash dishes when the business of the restaurant was prosperous. The third person he wants to say thank you is his elder brother’s wife, a vegetarian. Without her, “DaZhong Vegetarian Restaurant” does not exist.

三十年口碑,自栽健康蔬食為大眾

做一輩子葷菜的阿明師,剛開始轉型很困難,素食的眉角很不同,他勉強自己靜下心來研究,果然總鋪師的底子就是不同,讓他研發出一套專屬大眾的素味料理。他說:「吃素分很多族群,有純素的出家人、有隨意素的一般人、也有專吃奶蛋素的人。」即便是葷食者,到這邊都可以找到適合自己的好味道。

鍋類以昆布、香菇、紅白蘿蔔、牛蒡等熬湯底,少調味,吃的是蔬食原味,招牌有南瓜牛奶鍋,冬天熱銷則是養生麻油鍋、藥膳鍋。原味鍋也大受歡迎,因為這裡的蔬菜都是自家栽種,且特別以鬼椒打汁代替農藥噴灑作物,真正無毒真健康。

西式素味餐適合奶蛋族群,是葷食者也十分喜愛的風味。還有針對上班族的快餐,經濟實惠又方便。這裡空間非常適合團體聚餐,附設咖啡、法式甜點,還備有卡拉OK,真的是滿足各式各樣的顧客,難怪轉型五六年來生意興隆。

「珍惜善因緣。」是許源明一路走來的開悟,三十年來大眾這個店名帶給他成功,已經深有感情,如今他反過來,希望提供健康素味好料理,付出為大眾。 

Thirty-year Reputation, Planting Healthy Vegetables for the Public

Chef A-Ming, cooking all his life, encountered difficulties when the restaurant began to be transformed into a vegetarian restaurant. Cooking vegetarian food is different from the traditional one. Hence, he compelled himself to study the way of making vegetarian foods and then created a vegetarian cuisine suitable for the public. Even meat eaters can find a good taste suitable for their palates.  

The broth of the hotpots is made from kelps, dried mushrooms, carrots, turnips, and lappas. The signature hotpot is Pumpkin Milk Hotpot. Healthy sesame oil hotpot, Chinese Herbs Hotpot are hot items in winter. The Original Flavor Hotpot is popular because the vegetables are organic and planted by himself. Using Bhut Jolokia juice to replace pesticide, which makes the vegetables non-toxic and healthy.

A western vegetarian meal is suitable for Ovo-Lacto vegetarians and meat-eaters. The quick meals for office workers are economic and convenient. The space of the restaurant is a proper place for dinner parties. Coffee shop, French sweeties, and Karaoke are included in the restaurant. They can serve all the needs of the customers and make the business prosperous.   

For the past thirty years, “DaZhong” has given him achievements and affections. Now he hopes his healthy vegetarian cuisines can serve the public.
