臺中美食何其多?可除了歸鄉的外地遊子,想在菜市場內尋找好料,那得要拿出搜尋隱藏版美食,可遇不可求的熱情才行。但在臺中第二市場,即便是誤打誤撞,也絕對讓你不虛此行。

臺中的第二市場,在日據時代為新富町市場,又叫「貴婦市場」,裡面皆是人氣美食名店,隨便一問都歷經三代,每家都有說不完的老店故事。尤其這間三代福州意麵老店,倘若中午來此,絕對會被滿滿人潮嚇到。

店名開宗明義告訴你這裡意麵香傳三代,但實際已薪傳五代,只因第三代完成商標註冊便沿用至今。三代福州意麵老店曾祖確實從福州來,第四代老闆趙善棋說,阿祖於日治時期來臺定居,意麵是家傳料理,近百年的傳統美味從未改變,是道地福州純正的口味,所以這家小吃店儼然是祖傳事業。因為用料好、口味特殊,日治時期便常有日本客前來品嚐,現在更有許多國際各地的背包客按圖索驥聞香而來。

Although the restaurant has been passed down for 3 generations, it has been passed down for 5 generation. The third-generation completed the trademark and has been using it until today. Fourth-generation owner Shan-Qi Zhao mentioned that the ancestors carried homemade noodle to Taiwan and have not changed the authentic Fuzhou flavor. Many international backpackers and Japanese customers visit here. 

老闆!來碗Q彈鮮香意難忘

三代意麵許多媒體與美食節目都來造訪過,店家也不能免俗地放大張貼在店內。過去門楣上還會掛著三個大紅燈籠,寫著意難忘三個字,大概取其「意外地好吃到叫人難忘」的意思,也有「意」麵的古早味是家鄉難忘的懷舊滋味之意。

這裡意麵較一般白麵薄且寬,且絕不使用隔夜麵。據稱,福州並沒有所謂的「意麵」,本稱「力麵」,乃作麵除打蛋攪和,過程不加水,需十分出力之故。由於麵條確實香Q彈牙,所以很快打出名聲,進而遠近馳名。

Q彈麵條淋上黑豬後腿肥瘦三比七絞肉製成的肉燥,加上些許黑胡椒、青蔥,滑順且豬油香四溢。老闆為了方便客人,還組合套餐,乾意麵配上綜和魚丸湯或餛飩湯,成了這裡的招牌點法。另有人蔘等中藥滷上一小時的滷味,一張百元鈔票就能滿意飽足,價格絕對親民。

無論是蝦丸、旗魚丸、大顆的福州魚丸,鮮美盡出,大骨湯頭也香醇夠味。餛飩也是人氣商品,採黑豬後腿肉敲打成泥,口感有如貢丸般鮮甜有勁,但每日限量,經常不到中午就賣光,建議趕早光顧以免撲空。第二市場將屆百年,市場自治會長趙善棋,將為這座老菜市舉辦聯合慶祝活動,歡迎大家一起來慶生。

Unforgettable chewy noodles

The noodles are thinner and wider than average noodles and no overnight noodle shall be added. It is known that Fuzhou noodles are chewy and famous.

The noodles are drizzled with black pork leg and added with black pepper, onion, and smooth lard. The customer also prepares set meals including dry noodles and fish ball soup or wanton soup to become the typical order. Moreover, braised food using ginseng and Chinese medical will meet all mouths at affordable price.

Regardless of shrimp ball, swordfish ball, huge Fuzhou dishing ball, are fresh while the soup is mellow. The wanton is popular product that beat pork leg into paste to offer meat ball with fresh and sweetness. Each other the balls are limited and smashed into paste. 

福州意麵,香Q彈牙的意麵加上黑豬肉肥瘦三比七黃金比例的肉燥淋上去,香噴噴的真是絕配。

綜合魚丸湯,福州丸內餡飽滿咬下去會爆漿, 旗魚丸採魚漿加紅蘿蔔芹菜紅蔥酥,一碗湯包辦蝦味肉汁與魚香!
