來到屏東,自然不容錯過萬巒獨具特色的豬腳;如果您是一家子,攜老扶幼一同出遊,那麼更別錯過到大人物餐廳飽食一番。

大人物自1991年開業以來,一直是當地人宴請親友的指定名店。老闆林忠飛原在臺塑上班,後來在台北自行創業,直到父親生病,才舉家遷返萬巒。他開始研究健康養身紅麴,後來利用街上的老屋經營「大人物餐廳」。

餐廳取名「大人物」,源自無論童叟皆待如上賓的宗旨,將每位客人當成大人物。由於林老闆自小專研命理,在此酒足飯飽後,餐廳會免費提供算命,貼心到家。曾有患嚴重憂鬱症的顧客,經他命理分析及開導重新找回自信;亦有很多為婚姻、感情、事業、健康、工作升遷、政治仕途等疑惑的顧客在此得到答案。

大人物的商標也十足客家意象,結合大襟衫、夜合花、伙房屋脊,顯現出林忠飛對傳統文化的熱愛。餐廳裡播放客家歌曲,以客家藍衫等文物裝飾,流露濃濃客家風情,他也積極參與客家歌舞社團和文化協會,關心在地。

Big Wig is favored by the local people for inviting friends and family for meals since its opening in 1991. Owner Zhong-Fei Lin was working in Formosa Group but moved to Wanluan after his father got sick. He started studying healthy Anka and operates Big Wig Restaurant on the street.

The restaurant is named Big Wig for the mission to treat all guests as VIP. The owner also offers free fortunetelling to guests. Customers suffering from severe depression recovered confidence after his fortune analysis and guidance. He also offers answers to many customers with confusion in marriage, relationship, career, health, work and promotion, and politics.

The logo of Big Wig is very Hakka style that combines the cloth, Chinese magnolia flower and kitchen, indicating Owner Lin’s enthusiasm for traditional culture. The restaurant plays Hakka music and is decorated with Hakka blue shirt.

食與育結合,每一道菜都有動人的故事

獨特的紅麴豬腳連獲2010年全國豬腳比賽創意組第一名、2012年臺灣百大觀光特產認證等,2013年還獲客委會頒授「客家特色餐廳」認證,全臺只有十七家,屏東也只此一家,因此聲名大噪。

林忠飛說,大人物客家特色菜餚,有創新、也有兒時回憶,每道菜在他口中都是客家人胼手胝足的故事傳說,例如「長豆乾排骨湯」,使用海風吹曬豇豆乾,滋味非人工發酵可比擬,有錢不一定買得到;「花菜乾炒五花肉」,就是客家子弟小時常吃的花椰菜乾,配上五花肉製成,皆香氣濃郁,獨具屏東風情。

值得一提是這裡的客家菜全數使用本土食材,更有七成是屏東在地農產品。吸引饕家的人氣招牌菜式除前述之外,還有許多都是季節性美食。此外,沿襲古法開發出來的精緻伴手禮如:大人物鴉片泡菜、鳳梨醬、脆玉瓜等。尤其是鴉片泡菜,以大白菜加生鮮蔬果提味,不加人工甘味及防腐劑,佐餐之外,炒肉、炒飯、煮火鍋都十分美味,非常容易一吃上癮。

The unique Anka pork knuckle has been awarded first place in 2010 National Pork Knuckle Competition in category of Creativity, 2012 Taiwan 100 Tourism Specialty and 2013 “Hakka Featured Restaurant” by Council for Hakka Affairs. There are only 17 restaurants in Taiwan receiving such certificate and Big Wig is the only one from Pingtung.

Zhong-Fei Lin mentioned that the Hakka cuisine from Big Wig is innovative and comes with childhood memory. Each dish comes with the legend of Hakka people’s diligence and hard work. For example, “dried strip bean and pork rib soup” uses sea-breeze dried strip beans incomparable by artificial fermenting products.

It is worth-mentioning that all dishes use local ingredients while 70% of them are from local Pingtung agricultural products. Many special dishes are seasonal cuisine. Moreover the exquisite souvenir made of ancient techniques such as Big Wig pickled cabbage, pineapple sauce, are ideal as side dish, stir-fry, stir-fry rice, and hot pot without the artificial seasoning and preservatives.

After 3~4 hours of braising over low heat, the Big Wig Anka Pork Knuckle is presented with authenticity and unique flavor.

芋泥香酥鴨,表皮煎得酥香,芋泥入口鬆軟,且能感受到鴨的香甜滋味。

Taro paste with crispy duck. Crispy from the outside, the taro past is fluffy and the duck is sweet.

客家小炒,選用乾魷魚,搭配五花肉、豆乾、芹菜等,經主廚快火大炒,是一道具有客家特色的美食佳餚。

Hakka Stir-Fry. Selected dry squid stir-fried with streaky pork, dried bean curd and salary. A typical Hakka cuisine.
