Starting from a small noodles stand in Wuchi, famous for its seafood cuisines, New Palace International Co., Ltd. develops into an expanding catering empire, the first listed and OTC catering group.
You Cai-Ou, the founder, came to Wechi with his newly-wedded wife, Cai-dui Ou, in 1945 and started the business by selling noodles in a stand. Because the seafood they sold was “fresh,” “delicious,” and “cheap,” their business began to gain reputation. In 1967, an old customer once studying in Japan offered lots of Japanese seafood recipes to them; they started to sell all seafood cuisine. Chiang Kai-Shek, Chiang Ching-Kao, Tsai Lan (Hong Kong’s gourmet), Ni Kuang (famous writer), and Ann Lee (Director) are the guests of New Palace. The record of once severing dishes to 2300 tables in a banquet has earned it a name of “King of Roadside Banquet.” In 2003, the restaurant was over the counter; in 2009, is became a listed company.
Most of the ingredients used by New Palace are local seafood such as raw oysters, neritic squid, and drunk shrimps. The signature seafood dishes are outnumbered. The chef specially recommends “salmon head cooked with honeydew” and “scale sugarcane shrimps.” “Delicious roasted goose,” a must-eat cuisine of the restaurant, cannot be missed.” The oysters in “raw oysters salad” are sent from Wangkung directly every day and sterilized by lemon water.
New Palace is run by the second-generation Ou brothers. The third generation has begun to take charge of the brand development. The chefs and assistant cooks participate in an annual examination to maintain their cooking skills and at the same time to cultivate new outstanding cooks.
