話說西元1916年日治時期的臺灣,有位福州人輾轉到臺北落腳,在大稻埕圓環附近開了一間食堂叫「小春樓」,門庭若市,生意興隆,尤其他的滷味,是真正替小春樓打響名氣的功臣。第一代先祖葉朝銓,人稱「葉師傅」,苦心經營出口碑,可惜在當年敏感局勢下,不得不隱匿名聲,改換招牌低調經營,直到2014年6月8日,方由第三代嫡傳子孫正式傳承小春樓名號,並於今年堂堂跨入百年。

「一代傳一代,小春樓滷包獨家配方只有葉姓嫡傳才傳得到。年輕時對家族繼承沒想太多,是扶養父親長大的姑姑過世後,才認真思考葉姓子孫的責任,將阿公留下的小春樓招牌恢復回來,並期許在這個根基下繼續交棒下去,香傳下一個一百年。」第三代傳人葉淑美表示。

小春樓滷味使用十多種獨門香料精心調配而成,不管與豆類或肉類,都能完美結合。東南亞、港澳、乃至中國的遊客,都有人專程來選購。「以前小春樓太有名氣了!聽說過去逃難的時候,有很多我們這一代不知道的故事,尤其香港老一輩來此,都會指名念念不忘『想吃鴨舌』。」

In 1916, a person from Fuzhou came to settle down in Taipei and opened a restaurant near Taipei Circle, called “Shiao Chun Lou.” The business of the restaurant is prosperous and the braised snacks made the restaurant famous. By the efforts of Ye Chao-Quan, the first generation, called “Chef Ye,” the restaurant earned its reputation. Because of the political situation at that time, chef Ye had to run the restaurant by changing his name and the sign board. It was not until June 8, 2014 that the third generation officially inherited the name of “Shiao Chun Lou” and declared the store had 100 years old.     

The braised snacks of Shiao Chun Lou are braised with more than ten unique spices. Whatever beans or meats are perfectly matched. Visitors from Southeast Asia, Hong Kong, Macao, and China come here specially to select the snacks. “Shiao Chun Lou was too famous in the past! There were many stories unknown to us in the time of fleeing from a calamity. Especially the elder Hong Kong visitors will order ‘braised duck tongues.’”

年節餽贈好吃又好看

這裡的鴨舌較坊間多一遍手工去除喉管,可避免血腥雜味,味道更精純。除了鴨舌之外,將豬前腿骨頭取出後綑滷的綑蹄也是小春樓的鎮店招牌,貌似火腿的綑蹄,在大稻埕地區很有名,百年至今三代老街坊拜拜一定都會買。油亮的蜜汁系列也大受歡迎,例如豬肋排,採清晨現宰溫體豬,每天花三小時蜜汁製成;而蜜汁七里香全無騷味,口感有如享用京都排骨,怕騷的人也可大快朵頤。滷蔬菜方面也很有人氣,深受女性喜愛,早上四點多木柵七、八十歲老伯自種現採綠竹筍,嫩如水梨,也成為招牌。

「因為謹慎,所以我們什麼都自己做。」這是葉淑美的至理名言,畢竟食安問題茲事體大,所以小春樓連辣醬都自製,所有滷味也不添加任何色素與防腐劑。並為保護商譽,小春樓滷味皆有投保產品責任險。

葉淑美說:「說真的,不要再送老人家雞精或蛋捲了,買套小春樓滷味禮盒,內容可自挑自選,真空包裝很衛生,拜拜又好看,擺冷盤又很好吃,還能滿足全家大小的口腹之慾,真的最適宜。」

Delicious and Beautiful New Year’s Gifts

The particularity of our braised duck tongues is to remove duck throats,  which can prevent stink of blood and make the taste more delicious and essential. Besides duck tongues, braised bundled swine foreleg is the signature snack of Shiao Chun Lou. Similar to ham, the braised bundled swine foreleg is famous in Mongjuia. People always buy it to worship Gods and ancestors. The products with shiny honey sauce are popular, too.

“Being scrupulous so we make everything by ourselves,” said Yeh Shu-Mei. Due to the food security problem, Shiao Chun Lou makes spicy sauce by itself and all braised snacks added no pigments and preservative. In order to protect its reputation, Shiao Chun Lou’s braised snacks have product liability insurance.

“Frankly speaking, giving chicken essence and egg rolls to the old is old-fashioned. Buying Shia Chun Lou’s braised snack gift can satisfy all family’s palate, for you can select the snacks by yourself, it is packed by vacuum packaging, it looks pompous when worshipping gods and ancestors, and it is delicious, too,” said Ye Shu-Mei.
