開業至今超過四十年的朱記餡餅粥創立於1973年,是北方麵食界的老字號。店內提供道地牛肉餡餅、蒸餃、小米粥、炒手、刀削麵等美味餐點,一直以來深受消費者喜愛,因此一路開拓事業版圖,如今已是擁有十八家分店的企業規模。一進入位於臺北市仁愛路上的朱記總店,立即能感受到古色古香的濃厚人文風格,裝潢的概念,據說是仿照創始人北平老家的模樣,引人懷舊的氛圍,令人潮日日絡繹不絕,宛如舊時客棧。

朱記第一代負責人朱老先生,原是國民政府遷臺後的退休老兵,因難忍思鄉之苦,同時也希望讓第二代的眷村子弟能嘗到家鄉的滋味,所以與同鄉好友楊晉勇等三人,在臺北幸安國小附近開了第一家的朱記餡餅粥創始店。十幾年後,朱老先生因移民國外,楊老先生遂接手經營,時至今日,現已交棒第二代,並逐步於新竹以北的百貨公司設立分店,有了如今的規模。

即使老店不斷拓展新版圖、換上舒適明淨的環境,然而老一輩留下的好味道,到第二代手上依然雋永如昔,不乏政商與文壇名人光顧。紮實的手工麵香,熱騰騰冒著香氣的蒸籠,半透明廚房可看到師傅們擀麵、揉麵的熟練身影,客人看了安心、吃得放心,價格也很平實。

Zhuji Meat Pie and Millet Gruel Restaurant has setup for more than 40 years since 1973, which is the old and famous restaurant for its wheat foods. The restaurant serves beef pies, steamed dumplings, millet gruel, spicy won tons, and knife-shaved noodles. These dishes are loved by customers so now there are 18 branches in Taiwan. When first entering the main store on Renai Road, you can feel a strong humanity style which is an imitation of the old house of the founder in Peiping.

The first-generation person in charge, Mr. Zhu, was a retired veteran. In order to relieve his homesickness and let the second generation living in military communities taste the hometown relish, he and his best friends, including Yang Jing-Yong and the other, opened the first Zhuji Meat Pei and Millet Gravel restaurant near Hsin-An Elementary School in Taipei. After several decades, because Mr. Zhu emigrated, Mr. Yang have taken over the restaurant until now. And now the restaurant is taken charged by the second generation and the branches are set up in the department stores in the north of Hsinchu.   

Even though the restaurant keeps expanding its territory, the good taste left by the former generation is still the same. Solid hand-made wheat foods, steaming steamers, and a half-transparent kitchen where can see the chefs rolling and rubbing dough, which let customers eat foods at ease.

饒富嚼勁,原味鮮甜

朱記品牌經理楊維華說,饕家必點的招牌為朱記獨家口味的牛肉餡餅。一般來說,餡餅原本不會如此多汁,於是坊間多添加洋蔥或「皮凍」來增加內餡的湯汁。皮凍是以豬皮熬成,對人體的負擔較大,但朱記採用的是傳統「打水」法,亦即不斷地將湯汁和入牛肉餡料中,不但原汁風味,也比較健康,吃完嘴巴也不黏,多出來的一道工序,朱記對顧客的用心可見一斑。朱記餡餅外皮富有勁道,粉紅色的牛肉內餡飽滿,調味亦不過重,入口十分鮮嫩。

另外,份量十足的排骨炒飯深受年輕人喜愛,清爽的花素蒸餃也是人氣商品。不容錯過的小米粥、餅類,搭配樣式豐富的小菜,一道道都是令人滿足的美味。

朱記疼惜員工,讓員工感念在心。例如做花素蒸餃的青江菜費時費工,原本無須勞務的老闆擔心員工太累,半夜四點就自己默默把青江菜處理了。楊維華說:「誠信正直是朱記堅持的經營理念,對員工都願意如此付出,客人更可吃得安心。」

Chewy and Fresh

The brand manager, Yang Wei-Hua, said that beef pie is a must-order signature food of Zhuji. Generally speaking, meat pies are not so juicy so that many restaurants add onions or “hide jelly” to increase broth. However, Zhuji employs a way of adding broth into beef fillings, which is authentic and healthier. Zhuji’s diligence can be seen from this extra procedure. The dough of Zhuji’s meat pie is chewy; the pink beef filling is full; the flavor is not too heavy. It tastes fresh and tender.

In addition, the large portion of Fried Rice with Pork Sparerib is loved by young people. The fresh and cool steamed vegetarian dumplings are the hot-selling product. Millet gruel, pies, and diverse side dishes are delicious.
