正忠排骨飯起源於高雄市，成立於1991年，店名取為「正忠」，乃是因為一段鮮為人知的故事。創辦人王致中早在創業之初，在高雄三民區的正忠路，向一位也碰巧名叫黃正忠的房東租屋經營小吃店，因感念事業一路走來與「正忠」二字巧妙地結下不解之緣，所以取名正忠排骨飯以表不忘白手起家的初心。
本著好東西與好朋友分享的心情，正忠排骨飯做出「在地人的口味、出外人的便當」。發跡高雄的正忠排骨飯，傳統滋味的大片排骨，面積是手掌的一倍半，放進便當盒裡都滿出來了。鮮嫩多汁、味道鮮甜，以大塊好吃眾所皆知。
老闆初期為了調製出迎合南部人的排骨，親自嚐遍各種配方，據說一、兩年之內吃了幾百公斤肉，如此埋首鑽研出來的心得，就是「不裹粉的排骨」最能吃出優質豬肉的原味，果然，這樣的料理方式深受顧客喜愛，如今一家店一天要處理上百斤的排骨，生意好到連浙江地區的餐飲業者都前來觀摩取經。
Jengjong Spareribs originated from Kaohsiung and was founded in 1991. The restaurant was named Jengjong due to the appreciation of founder Zhi-Zhong Wang for renting the premise from landlord Zheng-Zhong (Jeng-Jong) Huang on Zheng-Zhong (Jeng-Jong) Road of Sanmin District, Kaohsiung.
The restaurant upholds to preparing “lunch box for travelers with local flavor.” The large piece of sparerib made of traditional savor from Jengjong Sparerib is one and half the size of palm that covers up the lunch box. Juicy, sweet and fresh, Jengjong sparerib is known for the large size and delicacy. The owner has tasted different formulas in person in order to prepare sparerib meeting the taste of southern Taiwanese. He intended to offer quality pork without coating in flour. The restaurant processes more than 60KGs of spareribs and even catering companies from Zhejiang area come to study.
大塊滿意，主菜、配菜超豐富
正忠排骨飯除了比臉大的招牌排骨，還有多種口味以滿足不同族群的胃，特別的是，不少都是餐廳才有的菜色，像料多味美的宮保雞丁飯，採用一隻雞只有兩條、肉質較嫩的雞里肌，用地瓜粉酥炸後，配上花椒、乾辣椒，有別於餐廳滑嫩的口感，脆口微辣，更讚的是，只要餐廳五分之一價就可以吃得到。另外，還有快餐店少見的黑胡椒豬排飯、燒雞翅飯等，同樣鮮嫩多汁，美味破表。並有琳琅滿目的十多種配菜，任君選擇。

Jengjong Sparerib not only offers chef’s sparerib bigger than the size of face but variety of dishes that will meet the different demands. Many dishes offered in real restaurants such as Kung Po chicken is not only delicious but also affordable at one fifth of the price compared with restaurant. Moreover rare dishes such as black pepper pork fillet trice and roasted chicken wing and rice are equally juicy and delicious.
Due to the affordable price, delicious dishes and praises by the public, Jengjong Sparerib has expanded to 25 stores since 1991 and even to Zhongli. Each store is the guardian store for Eden Social Welfare Foundation by cooperating with various charity events and giving feedback to the society.
