東海學區的藝術街,是一條斜坡上的氣質街坊,二十年前曾有女子,在這晨霧的山丘找到自己的夢想,還為夢想回鄉建造農場,並化自己的靈魂寫入人們的舌尖,讓味蕾尋回記憶中純淨的本質。

1995年成立的琵央卡,主廚李紀眉,在紐約念書,赴法、義修習廚藝,日本修習甜點、自然農法,與實事求是的店長江映紅兩人,有如理性與感性的四手聯彈,她們互補協作,將食物的熱情譜寫成一曲具人文與土地關懷的溫柔樂章。

「我們的蔬菜,是鳥吃剩之後才給客人吃的。」江映紅笑道。不理解「自然農法」的人,會對如此形容咋舌,但內行人就懂得,什麼叫「曬足陽光的蔬菜滋味」。像一般被當成配色的紅蘿蔔,在這兒一上檯面很快就被一掃而空,可想那滋味有多麼美妙鮮甜。

店名取自莎士比亞女配角琵央卡,卻老被客人膩稱為皮卡丘。其實從義大利三色便可知它的精神:綠色是從農場到餐桌的低碳環保,白色是純淨食材無過份添加,紅色是對料理乃至對社會終不悔的關懷熱情。這就是琵央卡自許配角,並永遠「把人們當主角」的心。

Bianca was founded in 1995 while chef Ji-Mei Li studied in New York, learned culinary skills from France and Italy, studied snacks and natural farming from Japan, who works with store manager Ying-Hong Jiang who is practical to supplement each other. They have composed their enthusiasm for food into gentle chapters of culture and care for land.

Ying-Hong Jiang claimed that; “the vegetables we offer to customers are left-over vegetables from the birds.” People not aware of “natural farming” would probably be shocked about it but experts know what the taste of vegetables is under full sunshine.  

The restaurant is named after the supporting actress of the movie, “Shakespeare in Love” but has been nicknamed by the customers as Pikachu. The three colors of Italy signify the restaurant’s philosophy in low-carbon and environmental protection from farms to dining tables, the white and pure ingredients without too much additives and the red color represents the care and enthusiasm for society. Bianca anticipates itself to serve supporting actress while treating “people as the main character.”

臺灣竟買得到自栽的朝鮮薊!

「只有客人喜歡吃的料理,無所謂得獎或知名料理。」李紀眉說。但即便自謙,琵央卡乃是英國皇家御用唐寧茶的指定服務餐廳,並曾獲行政院英語標章金質獎,更有一吃難忘的香草籽烤布丁名列台中十大伴手禮。

香草籽烤布丁,採用馬達加斯加香草豆莢,還有鮮奶、焦糖,簡單到你只能用口品嘗,否則難以言喻它的美味。「歐洲皇室之蔬」朝鮮薊,臺灣非常珍稀,卻是琵央卡一棵棵親手種出來的鮮蔬,也可網購宅配。

以自栽有機蔬果關懷客人健康到關懷社會,琵央卡多年前開始自問:「可以用食物為弱勢做點什麼?」之後,她們便積極為家扶中心義賣甜點、邀請寄養家庭小朋友喝下午茶,更進而尋找弱勢中的弱勢團體,幫助露德協會(愛滋寶寶)、導盲犬協會、世界和平會等義賣,讓更多人感受幸福。

位於學區的琵央卡,二十年來歷經學生相戀、成家、生子,跟著客人一起成長,許多人經常回到這兒流連,因此琵央卡矢志要成為保留記憶與故事的老店,讓客人回來之時,永遠找得到那四扇今昔不變的斜窗。

Ji-Mei Li said: “There is only cuisine that customers like and has nothing to do with award winning or famous cuisine.” Bianca still serves English royal Donning tea and has been awarded by the Golden Prize for English Emblem from the Executive Yuan as well as the unforgettable vanilla pudding listed on top 10 Taichung souvenirs.

The pudding is made Madagascar vanilla bean, fresh milk and caramel. It’s so simply that you could only taste or else it could no tbe described. The artichokes are rare in Taiwan but have been planted by Bianca, which is available for online purchase. 

吸收了濃濃鮮甜湯汁的西班牙海鮮燉飯,海鮮滋味與米香在嘴裡交融。
