中國醫藥大學旁邊,繁華熱鬧的學士路上,有一家名聞遐邇的風味小館。許多人特地遠道而來,都是為了品嚐以菜與客人交陪的好滋味。

寧波風味小館好幾道招牌菜的靈感,都是來自於創辦人鄧玲如對於人事物的觀察與體貼。鄧玲如早年嚐遍了人生酸甜苦辣,1995年先從黃昏市場發跡,販售鍋貼、大餛飩,2004年成立「寧波大鍋貼」,2008年成立寧波風味小館,2010年再成立彩色寧菠國際有限公司,人生歷經風雨,如今她自覺每個階段都有不同的使命。

店裡最具特色的彩色鍋貼,很能說明鄧玲如的體貼與創意。彩色鍋貼四種麵皮的顏色,分別來自四季新鮮的蔬菜水果。之所以會有這樣的靈感,全因有一天鄧玲如看到新聞報導南投有個小如,爸爸的山藥賣不出去。鄧玲如一方面心疼小如,一方面靈機一動,「何不結合在地的食材,讓鍋貼有不一樣的面貌呈現,然後又可以幫小如消耗山藥。」店裡四大天王的彩色鍋貼就此誕生:大甲檳榔心芋頭、大肚山紅地瓜、養生紅麴、地瓜葉、山藥……當令的食物從此奠定寧波小館最具差異化的特色:老菜新吃、顛覆傳統、創新研發。

The founder of the restaurant, Deng Ling-Ru, created several signature cuisines in Ningbo Flavor Restaurant. In 1995, she sold fried dumplings and wontons in an evening market. In 2004, she established “Ningbo Large Fried Dumplings” and Ningbo flavor Restaurant in 2008. And then in 2010, she established Colorful Ningbo International Co., Ltd..

The most unique dish in the restaurant in the “colorful fried dumplings.” The colors of the dough is made from fresh seasonal vegetables and fruits. Ms. Deng uses local produce to create different colors of fried dumplings, including Dajia’s taros, Mt. DaDu’s red watermelon, red Chinese rice, sweet potato vine, Chinese yam and so on. The seasonal foods make Ningbo flavor Restaurant unique: renovating old dishes, subverting tradition, developing and creating.

結合在地食材與獨門創意

除了四大天王鍋貼外,道口燒雞、竹筍糕、老皮嫩肉……每一道菜都有獨門的創意。黃金竹筍糕是採用與太平農會合作小農鮮採的麻竹筍,筍子的口感像水梨般鮮甜多汁。杏鮑菇泡菜精選新社鄉杏鮑菇,菇肉鮮嫩多汁、果味十足,更可減低肉的用量;寧果黃金泡菜則是挑選埔里大白菜,口感爽脆多汁,泡菜的醬汁可是鄧玲如專門研發出來的。

其他來客必點,網路馳名的招牌菜還有黃金泡菜、黃金貴妃元蹄、寧波燒芋、翠玉筍元氣泡菜、金針菇元氣泡菜等,又好吃又健康的秘訣何在?鄧玲如笑著說:「因為我自己愛吃,所以累積了無數吃的能量!」因為追求完美,又堅持讓客人吃到健康食材,寧波小館已經連續五年榮獲臺中十大伴手禮獎,更常有來自港澳、新加坡、日本、美國、德國的客人,以及國外媒體報章雜誌的報導,寧波風味小館正致力於將臺灣的特色美食邁向國際化,讓更多人品嚐到臺中在地的好滋味。

Integrating local produce and unique creativity

Daoko Roasted Chicken, Bamboo Shoot Rice Cake, Fried Tofu… each of the dishes is unique and creative. Golden Bamboo Shoot Rice Cake is made from ma bamboo shoot planted by the farmer cooperating with Taiping Farmers’ Alliance. Pickled King Trumpet Mushrooms are made from Shihshe’s king trumpet mushrooms; Ninguo Golden Pickled Vegetables are made from selected Puli’s Chinese cabbage.

四大天王,鍋貼彩色外皮是最大特色,採用臺中在地蔬菜如芋頭、地瓜、紅麴、山藥等,養生健康又富創意。

Four Kingsthe colorful dough is the most unique feature of the fried dumplings. They are made from Taichung’s local vegetables such as taros, sweet potatoes, Chinese red rice, and Chinese yams.

更歲餃子燒,外觀像是飛碟的餃子,靈感出自章魚燒,淋上法式蜂蜜芥末醬、香料和柴魚片,爽口好吃,適合小朋友。

Roasted Dumplings: the exterior of the dumplings is like UFOs. The dish is inspired by takoyaki. Topped with French honey mustard sauce, spices, and bonito flakes make them fresh and delicious. They are suitable for children.

黃金竹筍糕,嚴選新社香菇和大坑黃金玉冷筍,筍丁爽脆鮮嫩,溶入米糕後煎得外酥內嫩,口感層次豐富。

Golden Bamboo Shoot Rice Cake: It is made from the selected Hsinshe dried mushrooms and Dakeng golden jade cold bamboo shoots. The fried rice cake with the bamboo shoot blocks in it creates a rich taste.

道口燒雞切塊,採用多種中藥入菜,將原本燒雞偏鹹與油的口味,改良為低鹽少油的嫩皮燒雞,口感軟嫩。

Daoko Roasted Chicken: The dish is made by soaking chicken into several Chinese herbs. This roasted chicken is less salty and greasy than the traditional roasted chicken. It tastes soft and tender, healthy and delicious.

寧果黃金泡菜,清脆甘甜的白菜,以蘋果和數種蔬果醃漬發酵,口感酸甜中帶有果菜香,開胃妙品!

Ningguo Golden Pickled Vegetables: Chinese cabbages are fermented with apples and several vegetables and fruits. It taste saucy and sweet and has a fragrance of vegetables and fruits. A real appetizer!
