喜歡搭捷運兜遊臺北的都會遊俠,倘若途中突然想來碗熱辣鮮香的紅油抄手,或大飽滿意的水餃,別猶豫,來趟鼎記餃子館相信不會讓你失望。

位於捷運中山國中站附近的鼎記,其實擁有三十多年歷史,早期在四平街,後來遷到現址也已二十多年。一般人只要用餐時間走入這裡,不難發現客座滿滿,且幾乎人人桌上必點餃子、紅油抄手,還有本店特製涼拌豬肝。

不管是水餃還是抄手,鼎記的食物個頭都比坊間來得大一號,且圓滾滾地紮實飽滿。老闆莊俊逸說,包水餃,餃子皮是關鍵,麵粉深受溫度溼氣影響,所以每日都要「看天」調整,水和麵粉比例都需要拿捏,才能讓水餃吃起來口感與風味俱佳;煮水餃,水多水滾、控制火候是關鍵,下餃子不可以求快貪多,等到餃子表皮膨脹後,即可起鍋。

莊俊逸表示,鼎記的麵皮原本全數自製,後來生意實在太好忙不過來,才將配方交由特約製麵廠,必須嚴格按照他所要求的製法,量身訂做出鼎記專屬的麵皮才行,例如餛飩皮需使用高筋麵粉,內含一定比例的蛋白,口感才會滑Q有勁。

Dingji, near MRT Zhongshan Junior High School, has more than 30 years of history. It was located in Siping Street in the early time and has moved to the present location for more than 20 years. When the time of dining comes, the restaurant is crowded. Dumplings, spicy won tons, and self-made pork livers are ordered by most customers.

Whatever dumplings or spicy won tons, the size of Dingji’s foods is larger than other competitive restaurants. The owner, Zhuang Yi-Jun stated that dumpling dough is the key to make dumplings delicious. Flour will be influenced by moisture so it has to be adjusted in accordance with the weather every day. The proportion of water and flour should be proper. Heat control and the amount of water are the key to decide the taste of dumplings.

Dingji’s dough was made by itself. Because the business is too prosperous, Dingji gives the recipe to a noodle factory and ask the factory to produce dough only for Dingji. For example, the dough of won tons has to use high-gluten flour with a regular proportion of protein, which will produce a smooth and springy dough.

日本外商與背包客口耳相傳

鼎記的水餃內餡,選用當日現購的後腿肉、高山高麗菜和新鮮韭黃,加上高湯混拌調理,不加多餘的味精,保持原味鮮美多汁,光這一道,每日可賣出上千顆;紅油抄手,採豬肉口感最佳的胛心肉,加入打成漿的鮮蝦來提升鮮度,層疊包法,讓椒麻卻不過度嗆辣的紅油醬汁均勻包覆,再大方灑上芹菜、香菜、蔥花等配料,讓人忍不住一口接一口;招牌小菜的涼拌豬肝,因為新鮮上選,咬開來還透著粉紅,卻無任何腥味,醬汁開胃可口,連不敢吃的人也很容易一試上癮。

老闆莊俊逸說:「我這裡除了魚丸、貢丸,所有商品與配料全數自製,紅油不做化工添加、甕裝醬油也比別人貴四倍,尤其麵粉更是學問,三十年來我每天在廚房裡競競業業,專心守著老口味,都沒在外頭與人交陪。」倒是負責外場的小老闆莊志遠表示,鼎記有許多日本客人捧場,除了附近的外商公司,還有不少日籍背包客拿著朋友用手寫地址的名片前來,按圖索驥指名品嘗。來到臺北大都會,不妨前來試試,肯定滿意划算。

The fillings of Dingji’s dumplings are composed of fresh pig hindquarters, alpine cabbages, and fresh chives. Blending these ingredients with broth and adding no MSG preserve the authentic flavor of the fillings. Over one thousand dumplings will be sold in one day. Spicy won tons are made of pork shoulders and fresh shrimp paste to elevate the freshness. Won tons are coated with chili oil evenly but not too spicy. Celery, parsley, and scallion are topped on won tons, which make them delicious. The signature side dish, pork liver platter, is made from selected pork livers without any smell; even the person who dare not eat pork liver will love it at once.

Zhuang Yi-Jun said, “except fish balls and meat balls, all products in the restaurant are made by ourselves. The chili oil has no chemical additives, the soybean oil is four times expensive than others.’” The successor, Zhuang Ji-Yuan said that Dingji is visited by many Japanese customers, including Japanese tradesmen and backpackers. When coming to Taipei, don’t forget to visit Dingji Dumpling Restaurant. 紅油抄手:採層疊包法,讓醬汁均勻包覆,椒麻卻不過度嗆辣,灑上芹菜、香菜、蔥花,忍不住讓人一口接一口。
