舊時臺灣農村料理,傳承自對母親的懷念,謝阿姨美食坊的無菜單料理滿足了忙碌現代外食族,有種回家吃飯的溫馨,吃在嘴裡香,飽滿在心裡足,感動在懷念中。是來過的客人心中最合適的解語。
人稱謝阿姨的謝寶猜女士,純粹愛做菜,跟著偶像傅培梅女士學料理,結合兒時農村料理的簡單與用心,發展出屬於自己的特色料理私房菜。自1991年起,謝阿姨美食坊已走過24個年頭,一路走來始終如一,最讓客人絡繹不絕的是像回家吃媽媽的料理一般,不用點餐,謝寶猜常說:「小孩回家吃飯,哪需要點菜啊!」食材新鮮好吃,口味獨特,店裡的兩鍋芋頭米粉和芋頭粥無限量供應,成了客人戒不了的懷念。
這裡的用餐規則很簡單,一個人350元,以人頭計算菜量,兩人三道菜,三人四道菜,七人以上便是一人一道菜,依此類推,即使只有兩個人,三道菜中一定有一整條的清蒸魚和一盤雞肉,謝寶猜說:「因為就像回家吃飯,有雞有魚才澎湃熱鬧啊!」。
The ancient Taiwanese village cuisine is inherited with the remembrance of her mother. Aunt Hsieh Restaurant’s no-menu dishes satisfy the busy people eating outside.
Hsieh Bo-Tsai, called Aunt Hsieh, simply loved to cook. By learning with Fu Pei-Mei, and combining with simplicity and carefulness of the childhood dishes, she created her unique private cuisines. Since 1991, Aunt Hsieh Restaurant has opened for 24 years. Customers don’t have to order the meals just like coming home to have mother’s cuisine. Fresh food ingredients, unique taste, and two pot of taro rice noodles and taro porridge served without limit are remembered by the customers.
The dining principle in the restaurant is simple. The average cost of each person’s meal is NT$ 350. The number of the dishes is served in accordance of the number of people: two persons for three dishes, three person for four dishes, and seven persons above is one person for one dish. Even if there are only two persons, one fish and a plate of chicken are included within the three meals.
似簡單家常,實則經過千百次試驗
是的,從小菜、主食、配菜到飲料,用心之外還是用心,因此點「食」成金!雖然店內簡樸又位居地下室,依然人聲鼎沸,謝阿姨美食坊有著令人驚豔的凝聚力。芋頭稀飯和米粉是店裡的招牌,用10幾隻土雞熬製5個小時的雞湯,加上炒到恰到好處的芋頭,把粒粒的白米煮到開花,或是加上Q彈有勁的米粉,撒上油蔥酥和芹菜,一鍋鍋香味四溢、湯頭濃而不膩的芋頭稀飯和米粉,都讓人客吃到滿足為止。
配菜更不用說了,人家說能把最簡單的青菜炒到好吃,那才能真正地吃到廚師廚藝的精隨,不管是青翠鮮甜的高麗菜,或是翠綠的空心菜、A菜等等,都能讓顧客流連忘返。蒸魚更是一絕,祕訣就在新鮮,只要每天都從市場買來新鮮的魚,簡單的蠔油、香油、青蔥、薑絲,就能讓鮮魚的美味迸發出來,簡單、真實的美味就是謝阿姨的魔法。
感性的謝寶猜回溯舊時代農業社會的窮苦,歲月點滴累積的是心中滿滿的感激。用心料理,以感恩的心情,獻上盤飧中的美好,會一直她的堅持與態度。
Seeming simple and home-making, the meals have been tested for thousands of times.
Although the restaurant is simplistic and located in the basement, it is still crowded with people. Aunt Hsieh has a power to gather people together. Taro porridge and rice noodles are the signature dishes of the restaurant. The chicken soup is made by stewing more than ten chicken for five hours. Matching porridge or rice noodles with the properly fried taro, fried scallions and celeries makes the dishes fragrant and delicious. Customers can eat them until they are full.
Fried cabbages, water spinaches, and lettuces appeal customers. Steamed fish is better. Fresh fish steamed with oyster oil, sesame oil, scallions, shreds of ginger makes the dish delicious. Simple and authentic taste is the Aunt Hsieh’s magic.
芋頭米粉:吃到飽的招牌料理,以熬了五小時的雞湯作為米粉湯底,加入鬆綿芋頭、Q彈米粉、切得細細的豆皮,再撒上油蔥酥和芹菜。
Taro rice noodles: chicken soup stewed for five hours as the foundation of the rice nooldes; adding taro, rice noodles, shredded tofu skin, fried scallions and celeries makes the dish pefect.
芋頭粥:以熬了五小時的雞湯作為稀飯湯底,將白米煮到開花熟爛,吸足了雞湯香味,芋頭也綿滑入味,最後撒上芹菜末和油蔥酥,簡單而道地的傳統美味。
Taro porridge: the chicken soup stewed for five hours as the foundation; rice is stewed until it becomes soft and absords the taste of the chicken soup; the sofy and tasty taro topped minced celery and fried scallion on it; a simple and authentic traditional taste.
油蔥雞:皮Q肉嫩,膠質豐富,油雞幾乎是入口即化,吃得到濃郁蔥油味。是謝阿姨的招牌菜。
Baked chicken with scallions:springy skin and tender meat, rich collagen; the chicken melted in the mouth immediately.
美味小菜:雞爪有雞爪凍,膠質足,入味好吃。梅子苦瓜清脆不苦,開胃爽口。開胃泡菜酸酸甜甜,炎炎夏日吃最對味。
Tasty side dishes:frozen chicken paw: full of collagen, tasty; Bitter gourd with plums: crispy but not bitter, appetite-provoking; Pickled vegetables: sweet and saucy.
清蒸臺灣鯛:每條魚都是謝寶猜親自挑選,客人來到餐廳才現做,非常新鮮。清蒸臺灣鯛清甜細緻沒有土味,調味清淡。
Steamed Taiwan snapper: each fish is selected by Hsieh Bao-Tsai; made after being ordered by customers; very fresh. The fish has no fishy smell; its meat is fleshy and the taste is mild.
藥膳醉蝦:枸杞和米酒讓醉蝦香氣十足,酒味不濃,凸顯出蝦子的鮮甜。蝦肉口感紮實,愛蝦的人定會大呼過癮。
Drunken shrimps with chinese herbs: wolberry and rice wine make drunken shrips full of fragrace; no strong scent of alcohol.
