幾十年前的簡樸年代,若想吃一桌澎湃的辦桌臺菜,儂來餐廳是很多臺北人的首選。時到如今,幽靜的臺北巷子內,低調的招牌,難以想像這家餐廳裡高朋滿座的景象。
 
第一代黃洪忠十四歲踏進臺菜料理領域,曾在老店「蓬萊閣」打工,爾後更在臺北大大小小餐廳工作,年輕的黃洪忠肯吃苦又善於觀察,閒暇時便像美食漫畫的主角一樣,在廚房演練或反覆實驗,為的是早日熟練精通。天賦加上努力,黃洪忠逐漸掌握了臺菜精隨。老闆娘嚴素月說:「當時我先生和我有個夢想,想開的一家很好吃的餐廳。」這就是儂來,而這樣的夢想實現至今已經整整三十年了。這家很好吃的餐廳不僅保有口碑,還漸漸淬鍊出新的口味。

Decades ago, if people intended to eat an abundant Taiwanese cuisine, NongLai Restaurant was the best choice. Until now, located in a silent alley of Taipei and with an understated sign board, it is hard to imagine the restaurant being full of people.

The first generation, Huang Hong-Zhong, engaged in making Taiwanese cuisine at the age of 14. The young Mr. Huang was hard-working and talented. He gradually grasped the spirit of Taiwanese cuisine. Mr. Huang’s wife, Yen Su-Yue said, “My husband and I had a dream to open a restaurant with delicious foods.” The dream has come true for thirty years. The restaurant not only has good reputation but invented new tastes as well.

賦予臺菜新生命
如果說,第一代儂來主廚黃洪忠的特色,就在於堅持保留傳統臺菜的作法和口味,那麼第二代黃景龍的特色就是賦予臺菜新生命。黃景龍青出於藍,是赫赫有名的臺菜王子「龍師傅」,未滿四十歲便獲獎無數,征戰亞洲無戰不勝,榮獲2014年香港國際年輕廚師烹飪大賽個人金牌,2015年韓國亞洲名廚烹飪大賽個人雙金牌。之所以獲得這諸多金牌榮耀,凸顯出黃景龍料理與眾不同之處,在於創新改造許多經典臺菜的作法,讓臺菜有了新生命,這也是為什麼儂來餐廳許多菜色料理,明明別家餐廳也有,但口味截然不同。
 
例如很多人慕名來吃的招牌菜金沙排骨,先將鹹蛋黃炒香,讓蛋黃包覆炸過的排骨,口味多層次,香而不膩。海鮮沙拉的醬汁是獨門配方,豪華的海鮮分量多,但調味清爽,佐以甜甜黑豆,一入口令人驚喜。烏魚子炒飯到處都吃得到,但有很多客人說在儂來吃到的最好吃。這是結合了第一代的嚴謹和第二代的創意,成為無法仿製重複的招牌菜。嚴素月驕傲地說:「我們的料理跟別人口味不同、做法不同,所以根本無法仿製。」此外,過年圍爐可試試看儂來的年菜,組合豪華,價錢卻平實,是許多人除夕年菜的首選。
 
黃景龍年紀雖輕,卻相當有心傳承,經常可見他在各美食節目和廣播中不藏私地教菜,同時也在學校固定傳授中菜料理。他和他父親一輩子浸淫在料理中,「一生懸命」堅持著對於料理的熱情。
Granting Taiwanese Cuisine a New Life

Chef Huang Hong-Zhong insists on preserving the traditional taste and cooking skills of Taiwanese cuisine. The second generation, Huang Jing-Long, endows Taiwanese cuisine with a new life. Huang Jing-Long is the famous prince of Taiwanese cuisine, “Chef Long.” He won numerous awards before 40 years old and won in many competitions in Asia. Winning so many awards shows the uniqueness of Huang Jing-Long’s cuisine. He innovates many classic Taiwanese cuisines and gives life to them. That’s why the cuisines in NongLai are different from others.

For example, Golden Sand Pork Sparerib is made by frying marinated egg yolks and letting them cover a fried sparerib. It has multi-layered flavors, fragrant but not greasy. The sauce of Seafood Salad is the secret recipe. A great portion of luxurious seafood with light seasonings and sweet black beans makes people surprised when tasting it. Fried Rice with Mullet Roe can be eaten everywhere but customers say the dish is the best here. In addition, NongLai’s Chinese New Year’s meals are luxurious but inexpensive. It is the best choice of the meals in Chinese New Year’s Eve.
 

黃金排翅:排翅肥厚鮮美,干貝絲和竹笙讓排翅再升級。建議先喝一口原味高湯精華,再視個人口味添加銀芽、芫荽、紅醋。

Golden Sand Pork Sparerib: the signature dish is made by coating the sparerib with marinated egg yolks; it is sweet but not greasy, with rich tastes.

金沙排骨:店裡的招牌菜金沙排骨是利用鹹蛋黃的香,裹覆炸過的排骨,甜而不膩,層次豐富。

Fried shrimp balls with chili and nuts: fat and crispy shrimps, sweet and fresh scallions, chili and nuts adding flavors; spicy but can be accepted everyone.

帝王蟹和風沙拉:帝王蟹肉隻隻肥美,生菜新鮮,配著淋上和風醬的甜黑豆吃,分外清爽。 

Japanese King Crab Salad: fat and beautiful king crabs and fresh vegetables going with Japanese sauce and sweet black beans makes the dish fresh.

紅蟳米糕:精選紅蟳,隻隻肥美,膏黃蟹肉都飽滿。以洋蔥、紅蘿蔔大火快炒紅蟳,米糕吸飽了紅蟳滋味,相得益彰。

Mud Crab Rice Cake: selected mud crab, fat and beautiful, satiated crab butter and crab meat. Frying mud crabs with onion and carrot with full flames lets the rice cake absorb the taste of the mud crabs.

宮保蝦仁:蝦仁飽滿、爽脆,蔥香鮮甜,宮保增添風味,但不喧賓奪主,是怕吃辣的人也能接受的辣度。
