蒙古沒有蒙古烤肉,就像泰國沒有月亮蝦餅、四川沒有紅燒牛肉麵一樣,都是國民政府播遷之後,在臺發揚光大的美食。相傳十三世紀成吉思汗西征,行軍途中以盾為鍋、以矛為筷,烹烤草原牲畜牛馬羊,蒙古烤肉秀味十足,中央鼓起的大鐵板與誇張的長筷子,就是這麼形變而來的。四十年前,臺灣少有肉類為主食的吃到飽餐廳,陳詠富心中構思了夢想餐廳的藍圖,於1976年成立了「唐宮蒙古烤肉涮羊肉餐廳」;除了有大唐盛世般生意興隆的期許,亦有把客人當唐明皇、楊貴妃款待的寓意。
 
蒙古烤肉、涮羊肉、酸菜白肉紫銅火鍋,是主賣的烤涮三吃。老闆陳詠富說:「早年蒙古烤肉全臺最多不過十家,但鼎盛時期,光臺北就多達三、四十家,但像唐宮這樣四十年的老店真的不多。」
屹立不搖的唐宮,從外觀完全看不出高朋滿座,但每天下午五點不到,餐廳門口就有人開始排隊候位。成功秘訣在於食材選擇有他獨到的見解。就算颱風來臨菜價飆漲,為維持品質,寧願下重金不惜成本,照常供應所有的食材。

Mongolian barbecue does not exist in Mongolia. It is a gourmet advocated in Taiwan after KMT government moved to Taiwan. Forty years ago, there were few buffets offering meat as a main ingredient in Taiwan. Chen Yong-Fu planned a blueprint of his dreaming restaurant. “Tang Gong Mongolian Barbecue and Instant Boiled Mutton Restaurant” was established in 1976.

Mongolian barbecue, instant boiled mutton, and pickled vegetables and pork belly Mongolian hot pot are three main products.

From Tang Gong’s exterior, people cannot see the restaurant full of customers. But before 5 o’clock every evening, there are people lining up in front of the restaurant. The tip of success lies in the selection of the ingredients. Even if a typhoon is coming and the price of vegetables is rising, in order to maintain the quality, the restaurant is willing to spend a large amount of money to assure the ingredients to be served normally.

涮烤四十年,老外都指名

唐宮所提供的蒙古烤肉食材有五種肉類、十種蔬菜、十種調味料,酸甜辣鹹應有盡有,想多吃菜或多吃肉,皆由自己動手DIY,濃淡口味也自理。
另外,從開放式廚房看老師傅在三、四百度高溫下,拿長筷在大火中快速翻炒,宛如一場挑動食慾的翻炒秀,短短不到一分鐘就變出一碗色香味俱全的蒙古烤肉,因此廣受海內外饕客喜愛。
有時觀光局接待外賓,一路從北吃到南,結果外賓指名想再吃「第一天那家」,正是唐宮蒙古烤肉和酸菜白肉火鍋搭配的絕妙滋味,讓外賓一吃難忘。所以唐宮常成為政府推薦外賓參觀的美食名店,每年也都會接受國內外五六家電視臺的專訪。
 
自助式的蒙古烤肉怎麼吃最好吃?初次體驗的人,建議調味料最好參照標示的用量,就可以得到零失誤的美味。另外,現烤熱騰騰的手工芝麻小燒餅,也絕不能錯過,夾肉吃相當可口,隱藏版美味。酸菜白肉鍋的酸白菜也與眾不同,採用天然釀法,滋味不減卻更加爽脆。
 
「內行人會吃得出我們的用心。」陳詠富說,因為堅持信念,獲得許多老顧客的支持,才有老字號的唐宮,他的心中充滿感恩,會繼續守護美味的品質。

Instant Boiling and Roasting for Forty Years, Designated by foreigners

Tang Gong provides five kinds of meat, ten kinds of vegetables, ten kinds of seasonings for Mongolian barbecue, which can satisfy the need of customers. Customers can make the dish by themselves and decide the flavor they prefer.

In addition, through the open kitchen, customers can see the old chefs stir-fry the ingredients in full flames with long chopsticks, which is like an appetite-provoking live show. Within a minute, a delicious Mongolian barbecue appears so it is loved by domestic and foreign gourmets.

When Tourism Bureau met foreign guests, the guests required to have a meal in Tang Gong. Tang Gong’s Mongolian barbecue and pickled vegetable and pork belly hotpot impress foreign guests a lot. Consequently, Tang Gong is recommended by the government as a famous restaurant to foreign guests and will be interviewed by five to six television stations annually.

How to make the DIY Mongolian barbecue delicious? Beginners are suggested to follow the instruction about the quantity of seasonings should be used. In addition, the freshly baked hand-made sesame buns cannot be missed. Eating the bun with a meat is delicious. The pickled vegetables of the pickled vegetables with pork belly hotpot is unique. They are pickled naturally and taste fresh and crispy.

Owing to its diligence, Tang Gong is supported by many old customers. Chen Yong-Fu is full of thankfulness and will keep on defending the quality of the taste.
