成立於1978年的梅村,是老字號日本料理店,許多人從年輕吃到老,爸爸帶兒子來,變爺爺帶孫子來。這兒外場服務生也多是老員工,跟老主顧能彼此以綽號相稱,氣氛融洽輕鬆地打成一片。

梅村的精神領袖是董事長永連生。他自小家境清寒,為改善艱苦的環境,十三歲的小小年紀,便到臺北當學徒。當年進日本料理店習藝很辛苦,日式教育習慣嚴厲打罵,小學徒一大清早忙到晚,卻只能幫師傅洗圍裙、打雜,初期連廚師的刀碰都不能碰。但永連生十八歲就出師,十分的早慧,學成之後沒多久,他便在城中市場租攤賣關東煮,半年後即自行開業,成立梅村日本料理。

梅村最輝煌的鼎盛時期,曾多達十家分店,後來陸續併回總店,現今成為提供五百席次的大型日本料理店,服務單點、套餐、宴會、包廂等,能因應客人各種不同的消費需求。

MeiCun, established in 1978, is an old and famous Japanese restaurant. Many people had visited the restaurant since they were young. The waiters are mostly old employees; customers and waiters greet one another by their nicknames. The atmosphere here is friendly and easy.

The spiritual leader of MeiCun is Chairman, Yong Liang-Shen. He was born in a poor family. In order to improve the difficult living environment, he came to Taipei to be an apprentice at the age of 13. Being an apprentice was hard, young apprentices were busy all and often blamed and beaten. What they could do was wash chefs’ aprons and do odds and ends. However, Mr. Yong became a chef at the ages of 18 and began to sell oden in Chengzhong market. After half a year, he established “MeiCun Japanese Restaurant.”

There were more than 10 branches at MeiCun’s prime time. And later, the branches are gradually merged into a large Japanese restaurant having 500 seats and serving a la carte, combo meal, banquet, and compartment. 

敬獻給客人有如量身訂做的套餐

如何成為臺北人記憶中難忘的好味道,並在景氣起落中屹立不搖,三十多年來梅村有自己獨到的清晰理路。在永連生的觀念裡,料理不外呈現技術、食材、與文化,這三種餐廳特質,梅村鎖定的是提供日本料理最講究的「食材挑選功夫」。不但直接從源頭的漁港、漁船達成合作,每日選進最新鮮優質的漁獲,還要經過老經驗的師傅在幕後的妥善處理、熟成,才能在食材最佳品嘗時機,完美地呈現給顧客;並且還為客人嚴格把關,選用具有產銷履歷認證的業者,即便需要默默吸收墊高的成本,也堅持原價供應給消費者,務求客人吃得放心。

除以傳統美味抓住老客人的心,梅村也增加創意菜色以開拓新的客源,每三個月會精心設計,變換菜單主題。例如四到六月,推出「母親節套餐」,選用適合成熟女性的精緻蔬果、海鮮入饌等;而七到九月,推出「父親節套餐」,選用高檔的肉類,如牛舌、龍蝦等,呈現給客人有如量身訂做、貼心豐富的菜式。

懂得吃日本料理的人,都曉得梅村的料理CP值很高,食材一流,反應到價格上依然十分實惠,因為身為日本料理發展協會理事長的永連生,對事業早已不存追求利潤的野心,他更關注於社會責任,店內會任用啟智建教生,並擔任臺北監獄料理講師,還定期探望養老院、孤兒院,回饋社會不遺餘力。

Special combo meals made for customers

MeiCun has its unique concept to stand firmly in depression and prosperity of economy. In Mr. Yong’s idea, cuisines should show skills, ingredients, and culture. MeiCun focuses on the exquisite selection of ingredients. It cooperates with the fishing ports and fishing boats to import fresh seafood every day. The ingredients should be dealt with properly by experienced chefs to preserve their authentic flavors before being served to customers. In addition, MeiCun spends much money buying the ingredients passing the traceability certification and supplies these ingredients to customers in an original price. The customers can have them at ease. 

MeiCun is innovative and keeps creating new meals to appeal new customers. Every three months, it will design and alter its theme menu. For example, from April to June, the restaurant will serve “Combo Meal for Mother’s Day,” which has delicate vegetables and fruits and seafood. And from July to September, it will serve “Combo Meal for Father’s Day,” which has prime meat such as ox-tongue, lobster. The meals seem to be customized and have diverse and considerate cuisines.

People who know how to eat Japanese meals know CP ratio in MeiCun is high. The ingredients are the best but the price is cheap. Being a president of Japanese Cuisine Development Association, Yong Liang-Shen no longer pursues profits from his business but cares much about social responsibility. He employs mental-retarded students in his restaurant and assumes the positions of the lecturer of cuisine in Taipei Prison. He also visits nursing institutes, orphanages periodically, too.
